Ingredients for this recipe:
- 6 Young brinjals
- Olive oil
- 2 Tablespoons butter
- 1 Tablespoon grated lemon rind
- 1 Tablespoon dukkah (a North African spice available from delis)
- 4 Tablespoons almond flakes
- 1 Cup Couscous
- 1 Cup chicken stock
- 8 Dates, pitted and roughly chopped
- 2 Tablespoons chopped coriander
Method for this recipe:
- Preheat the oven to 450 degrees fahrenheit
- Grease an oven pan with olive oil
- Remove a thin slice lengthwise from the top of each brinjal to create an opening for stuffing.
- Put the brinjals in the greased pan, drizzle with olive oil and bake for 20-25 minutes.
- Heat the butter in a saucepan and stir-fry the lemon rind, dukkah and almond flakes for 5-7 minutes or until fragrant.
- Add the couscous and stock, stir well, cover and bring to the boil.
- Remove from the heat and leave to stand for 10 minutes or until the grains are swollen and all the liquid has been absorbed.
- Fluff the couscous with a fork and stir in the coriander.
- Scoop out a little of the brinjal flesh, chop it and mix with the couscous.
- Stuff the hollowed-out brinjals with the couscous mixture and serve as a side dish with meat.

Caramelised Brown Mushrooms
This is a dish that is perfect to serve with creamy risotto.
Ingredients for this recipe:
- 2 Tablespoons butter
- 1/2 lb. Brown mushrooms sliced into thick slices
- 1/2 lb. Portabellini mushrooms
- 2 Tablespoons olive oil
- 1/2lb. Pickling onions
- 2 Tablespoons brown sugar
- 4 Tablespoons balsamic vinegar
- Salt and freshly ground black pepper to taste
Method for this recipe:
- Heat the butter and fry the mushrooms until brown.
- Set aside.
- Heat the oil in a pan and add the onions, sugar and vinegar.
- Saute until the onions are slightly soft and caramelised.
- Season tjo taste.
- Mix the mushrooms with the onions and serve with risotto.

Peaches in Sweet Sherry
Ingredients for this recipe:
- 4 Large dessert peaches
- 1 Cup sugar
- 2 Cups white wine
- 1 Cup sherry
- 1 Vanilla pot, split
Method for this recipe:
- Place the wine, sherry, sugar, vanilla pod and vanilla seeds in a saucepan.
- Bring to the boil stirring until the sugar has dissolved.
- Add the peaches and simmer for 20-25 minutes until tender but firm.
- Romove the peaches from the syrup and peel carefully.
- Return to the syrup and leave to cool.
- Decorate with fresh mint and serve as is, or with whipped cream.

Berry Jello with Chocolate Shortbread.
Ingredients for this recipe:
Chocolate shortbread:
- 1 Cup butter
- 3/4 Cup sugar
- 11/2 Cups flour
- 1/3 Cup cocoa
- 1/2 Cup castor sugar for sprinkling
Jellos:
- 2 Cups rose wine
- 6 Tablespoons sugar
- 2 Teaspoons gelatin
- 3 Cups fresh mixed berries
Method for this recipe:
Shortbread:
- Preheat the oven to 400 degrees fahrenheit
- Cream the butter and the sugar.
- Sift in the dry ingredients.
- Mix until it comes together to form a soft dough.
- Refrigerate for 20 minutes.
- Roll out the dough to a thickness of a little less than 1/2 an inch on a lightly floured surface.
- Cut out shapes with a cookie cutter.
- Place on a greased baking tray and bake for 20 minutes.
- Remove from the oven and sprinkle with castor sugar.
- Allow to cool.
Jellos:
- Heat the rose wine, sugar and gelatin in a small saucepan until the sugar and gelatin have dissolved completely.
- Remove from the heat and leave to cool slightly.
- Divide the mixed berries between individual moulds or ramekins and top with the cooled jello.
- Refridgerate for two hours to set.
- Turn out onto serving plates and serve with the shortbread.

Berry Cupcakes
Ingredients for this recipe:
- 1 Cup butter
- 1 Cup castor sugar
- 1 Teaspoon vanilla essence
- 4 extra-large eggs
- 1 Cup self-raising flour
- 1 Teaspoon baking powder
- 12 paper cupcake cases
Topping:
- 1/2 berry jam
- 1 Cup cream, whipped
- Fresh mixed berries, to serve

Method for this recipe:
- Preheat the oven to 400 degrees fahrenheit
- Cream the butter and castor sugar.
- Mix in the vanilla essence.
- Add the eggs one at a time beating well after each addition.
- Sift the self-raising flour and the baking powder.
- Gently fold them into the butter mixture.
- Spoon into the cupcake cases and bake for 25-30 minutes until golden brown.
- Allow the cupcakes to cool .
- Cut off the dome of each and top with a teaspoon of berry jelly.
- Add a generous dollop of whipped cream and decorate withfresh berries.
- You can also tie a pretty ribbon around each cupcake.
