Here are your Valentine's Day Recipes:
Baked Oysters
- Select large oysters and wash their shells thoroughly by scrubbing with a brush.
- Place the oysters in a baking pan in a very hot oven, bake until the shells open.
- Remove the upper shells, add a little butter, salt and pepper to each oyster, and serve in the under shells.
Tip: do not replace the butter with margerine.
Salmon fillets a la Espagnole
Ingredients for this recipe:
- 11/2 lbs. Salmon
- Salt and pepper to taste
- Butter
- Bread crumbs
Espagnole Sauce*
*See recipe below.
Method for this recipe:
- Cut salmon into 8 fillets.
- Sprinkle with salt and pepper.
- Place into a greased pan.
- Dot with butter.
- Bake for 10 minutes at 500 degrees Fahrenheit.
- Remove from the oven.
- Drain of any liquid.
- pour over the Espagnole Sauce.
- Cover with buttered bread crumbs.
- Bake until the crumbs are brown.
Espagnole
- Chop finely one small carrot and 2 slices onion, then put into a saucepan together with 4 table spoons butter, 1 bay leaf, sprig of parsley and 6 peppercorns.
- Stir until brown, then add 4 tablespoons flour, and when well browned, add 2 cups brown stock and 1 ripe tomato cut up.
- Boil for 10 minutes, then strain and season with salt and pepper.
If brown stock is not on hand, use boiling water to which Meat or Vegetable Extract has been added.
Heart Shaped Cherry Pudding
Bake these puddings in hart shaped molds for a lovely Valentien's dessert with a difference.
Ingredients for this recipe:
- 2 Eggs
- 1/4 Cup sugar
- 1/4 Cup butter
- 1 Cup flour
- 1 Teaspoon baking powder
- 1/4 Lb. crystallised cherries
Method for this recipe:
- Cream sugar and butter together.
- Add beaten eggs
- Add the flour mixed with the baking powder.
- Butter your small heart shaped moulds.
- Arrange the cherries in them.
- Fill them 2/3 full with the mixture.
- Bake in a moderate oven for ± 20 minutes. The time depends on the size of your moulds.
- Turn them out and and serve with any sweet sauce or custard.
Variation:
If liked 1/2 cup raisins may be added, and instead of cherries, walnuts may be used and a little strawberry jelly dropped in the bottom of each mould.
Heart Shaped Mint Chocolates.
To make these hearts use any heart shaped moulds and use only the best quality cooking chocolate you can find. Flavour the chocolate with mint flavored oil. Do not use normal essences as these will cause the chocolate to thicken and get grainy. wrap your hearts in red or pink foil.
If you are a person that like "white" chocolate, you may use it and lightly color it pink with special powdered food coloring for chocolates. Do not use too much of the coloring as it will affect the taste of the chocolate.

Roasted Fillet With Mustard And Peppercorn Sauce:
Rub a 3lb. fillet with olive oil, coarse salt and crushed peppercons.
Preheat a grilling pan and cook fillet on mediam-high, turning frequently until well browned and mediam rare- approx. 20 minutes.
Sauce
Ingredients for this recipe:
- 3 Tablespoons finely chopped onion
- 2 Tablespoons Butter
- 2 Tablespoons wholegrain mustard
- 2 Tablespoons Dijon mustard
- 1 Cup beef stock
- 1/4 Cup brandy
- 2 Tablespoons red peppercorns, crushed
- 2 Tablespoons green Madagascar peppercorns, crushed
- 1 Cup pouring cream
- 1-2 Tablespoons sugar
- Coarse salt and pepper to taste
Method for this recipe:
- Saute onions in the butter in a medium pot until softened.
- Stir in mustards and add the beef stock and brandy.
- Add peppercorns and simmer.
- Pour in the cream and reduce on medium heat until sauce thickens.
- Whisk in 1-2 tablespoons of sugar to taste.
- Season with coarse salt and pepper and serve with the fillet.
Fillet with Coca-Cola Sauce
Few can resist a juicy fillet or steak. For a healthier option try ostrich as it is lower in fat and cholesterol.
Meat:
6 Ostrich Fillets (if available, otherwise beef fillets)
4 Tablespoons soy sauce
Coca-Cola sauce:
- 1 Tin Coca-Cola
- 1 Tablespoon crushed juniper berries
- Pinch of ground black pepper
- 1/4 Teaspoon salt
- 3/4 Cup red wine
- 4 Tablespoons cream
- Cornflour
- Vermicelli rice noodles to garnish
Meat:
Marinate the meat in the soy sauce for at least 90 minutes.
Sauce:
- Heat together the Cola, juniper berries, pepper and salt.
- Bring to the boil and rapidly boil until the liquid is reduced by two thirds.
- Add the wine and boil until reduced by half.
- Add the cream and simmer for a further two minutes.
- Thicken with the cornflour if needed.
- Heat a griddle pan and fry the fillets until brown on the outside and then cook to the required degree of readiness.
- Make a few incisions in the meat and serve with the sauce.Plunge a handful of vermicelli noodles in heated oil and fry until crisp.
- Stack on top of the fillets

Beef Olives With Prunes
Stuff beef olives with prunes, spread them with a little Marmite and cook in a black pot. Serve with rice, polenta or mashed potatoes.
Ingredients for this recipe:
- 12 Thin slices topside beef
- 2 Tablespoons French mustard
- 1/2 Teaspoon salt
- Freshly ground black pepper to taste
- 24 Pitted prunes
- 24 Pitted green olives
- 1 Tablespoon Marmite
- 2 Tablespoons oil
- 2 Tablespoons butter
- 1/4 Cup white wine
- 1/4 Cup beef stock
- 1 Bouquet garni
- 2 Tablespoons lemon juice
Method for this recipe:
- Put the meat slices between two layers of clingfilm and beat gently to flatten.
- Spread one side of each slice with mustard and season with salt and pepper.
- Stuff the prunes with the olives.
- Put two prunes in the centre of each meat slice.
- Roll up slices and secure with cocktail sticks.
- Spread the outside of the rolls with Marmite.
- Heat the oil and butter in a black pot (if you have one, otherwise a normal pot will do).
- Fry the rolls until golden brown.
- Heat the wine and the stock and pour over the meat.
- Add the bouquet garni, reduce the heat, cover and simmer until the meat is tender. (About one hour)
- Add the lemon juice and adjust the seasoning.
Serve with rice, mashed potatoes or polenta.

Parma Ham Pasta
Ingredients for this recipe:
- 3/4 Pack shell shaped pasta
- 3 Cup-s cherry tomatoes
- 1 Bunch of flat leaved parsley, chopped
- 1 Clove garlic, cruched
- 1/2 Cup Kalamata olives
- 12 Slices Parma ham
- Good quality olive oil
- Juice and zest of 1 lemon
- Salt and pepper
Method for this recipe:
- Cook the pasta according to the instructions on the packet and drain well.
- Halve the tomatoes and season with salt and pepper.
- Add the garlic, lemon juice and a generous dach of live oil.
- Crush the tomatoes lightly with a fork to release the juices.
- Toss the pasta, tomatoes, olives and parsley together.
- Allow to marinate for a few minutes.
- Serve topped with parma ham.
