Pasta Chicken Recipes
The combination of chicken and pasta is always a very good one. These pasta chicken recipes are hearty family meals all will enjoy.
Macaroni and Chicken Dish
Ingredients:
- 1 medium cooked chicken [skin and bones removed]. Keep stock
- 1 lb ready cut macaroni
- 2-3 large onions
- 1-2 green peppers
- Cream [optional], if adding other vegetables
- Butter or oil to fry vegetables in
- 1 packet bacon
- 1 tin mushrooms
- 1 pt white sauce
Method:
Cut onions into rings. Cut green pepper into thin strips after pips had been removed.
Fry onion rings and green pepper strips
Cut the chicken into edible pieces.
Fry the bacon, add the chicken pieces, stir.
Add the mushrooms. Stir through.
Cook macaroni as shown on the packet.
Rinse under cold tap and cook another 5 minutes in the chicken stock. Mix in the chicken mixture.
White Sauce
Ingredients:
- 4 tsp butter
- 1 pt hot milk
- 4 Tsp flour
- Salt and pepper to taste
- 1 cup grated cheddar cheese
Method:
Melt the butter – add flour slowly and mix to a smooth paste.
Add the hot milk gradually while stirring to prevent lumps.
Cook until thick.
Remove the mixture from the stove and add the grated cheese.
Stir the chicken mixture into the white sauce.
Pour into an uncovered ovenproof dish and bake for 10 - 15 minutes in the preheated oven. [380 deg. F]
This recipe can be stretched by adding any cut, cooked vegetables of your choice.
Increase the white sauce accordingly.
Chicken Noodle Dish
Ingrecients:
- 10 oz noodles
- 1lb ground chicken
- 1 onion, chopped
- 14 oz tinned tomatoes
- 2 eggs
- 1 chopped green pepper
- ½ lb cottage cheese [smooth]
- ¼ lb cheddar cheese
- 4 Tsp oil
- 8 oz tomato puree
- Salt and pepper to taste
- Dried thyme and rosemary to taste [optional]
- Buttered crumbs
Method:
Fry the chopped onion and chicken in the oil until light brown.
Add the tomatoes, green pepper, tomato puree, salt and pepper and simmer for half-an-hour.
Mix the cottage cheese with the eggs and white sauce.
Add thyme and rosemary, if using.
Drain precooked noodles.
Place half of the noodles in an oven dish and cover with half of the chicken mixture and then half of the white sauce.
Put a layer of grated cheese over and repeat these layers, ending with grated cheese.
Sprinkle buttered crumbs over and bake in oven at 350 deg. F. until golden brown.
Remeber, all pasta chicken recipes can be "stretched" with extra vegetables and a tasty fresh salad.
