Mothers Day Luch - Just for Mom Tuna Melt


 

What You Need:


  • 1 (6 oz.) can light tuna in water, drained and flaked
  • 1/4 C of mayonnaise
  • 1 celery rib, rinsed, trimmed and chopped
  •  1/4 C of black olives, pitted and chopped
  • 1 t parsley flakes
  • 1/8 t pepper
  • 1/4 t lemon juice
  • 2 slices rye bread, lightly toasted
  • 1/2 C sharp cheddar cheese, shredded

How to Make It:


  1. Set the broiler to preheat.
  2. Cover a cookie sheet completely with heavy duty aluminum foil.
  3. Place the tuna into a mixing bowl.
  4. Fold the mayonnaise in with the tuna.
  5. Add the celery and olives and blend to combine well.
  6. Sprinkle in the parsley and pepper.
  7. Pour the lemon juice into the mixture and stir until all the ingredients are combined together well.
  8. Place the rye bread slices on the prepared baking sheet.
  9. Divide the tuna mixture between the 2 slices of bread spreading it out evenly.
  10. Sprinkle the cheese over the top of both slices of bread.
  11. Broil 6 inches from the heat for 2 minutes or until the cheese is melted and bubbly.

Cooking time:  approximately 2 minutes

Total time:  approximately 12 minutes


This sandwich is a perfect addition to any surprise Mothers Day lunch.  Be sure to taste the tuna before spreading it on the bread because you may need to add a little salt. 


Because tuna and mayonnaise both contain a lot of salt it should not be added until after it's mixed together and tasted.

We Love You Mom Chicken Salad


What You Need:


  • 1 C of mayonnaise
  • 1 (8 oz.) container of sour cream
  • 3 lb. boneless and skinless chicken breasts, cooked and cubed
  • 1 C of celery, diced
  • 1 C of seedless grapes, quartered
  • 1/4 t salt
  • 1/4 t pepper

How to Make It:americas secret recipes


  1. Place the mayonnaise into a small bowl.
  2. Fold the sour cream into the mayonnaise until well combined.
  3. In a larger bowl place the chicken, celery and grapes.
  4. Fold the mayonnaise mixture into the chicken mixture and blend until completely covered.
  5. Sprinkle in the salt and pepper and stir to combine well.
  6. Chill for at least 1 hour before serving, being sure to stir again after removing from the refrigerator.

Makes 12 servings


Preparation time:  approximately 30 minutes

Chill time:  approximately 1 hour

Total time:  approximately 1 hour 30 minutes


Place a T of this chicken salad on homemade biscuits and serve it to Mom for her lunch.  Add a bouquet of flowers and a card and she will know just how much you truly appreciate her.
