Good old Peanut Butter and Jelly Sandwiches With a New Jacket!
Before we get to the peanut butter, here are a few other fun nut recipes options:
1. Nuts And Cheese Recipe:
Mix equal parts of grated cheese and chopped walnuts, season with salt and pepper and moisten with mayonnaise.
2. Celery And Nuts Recipe:
Chop celery very fine. Chop the walnuts very fine. Moisten with salad dressing.
3. Cream cheese And Nuts Recipe (also suitable for cottage cheese):
Chop nuts fine and mix into the cream cheese, then moisten with salad dressing if neccessary.
4. Apple, Celery And Nuts Recipe:
Chop fine apple and celery and mix with finely chopped walnuts. Moisten with salad dressing.
Generations of kids have been brought up on peanut butter and jelly sandwiches. It will always remain a favorite for a quick and healthy lunch or a light snack. For generations it has been a success recipe for busy moms. It can be, though, that your kids are getting a little bored with it. Maybe it is time to rethink these peanut butter and jelly sandwiches and create new and exiting recipes for them. You’ll be surprised at how many different and exiting combinations there are that the kids will love.
Here are a few recipe suggestions.
1. Peanut Butter and Banana or Sliced Strawberries recipe:
An easy way to makeover your child’s peanut butter and jelly sandwich is to exchange the jelly for some fresh fruits. You can slice up some bananas or strawberries and top the peanut butter with them. Other favorites are raisins and blueberries. By substituting jelly with fresh fruit, you ensure your child gets one of their daily servings of fruit with this healthy lunch or snack. If you don’t have fresh fruit on hand, or your child just doesn’t want to taste this new version of the old favorite, start with some all natural fruit spreads as a peanut butter topper instead. You’ll decrease the amount of sugar your child eats by making this simple change. When trying to introduce a new taste, always start with a small amount until your child gets used to the new taste, this way you’ll have less opposition and more success.
2. Try Different Fruit Spreads:
Speaking of fruit spreads, simply trying a few different jellies and fruit spreads instead of plain old grape jelly are a great way to change things up when it comes to a peanut butter sandwich. Browse through the jelly section of your local grocery store and you’ll find all kinds of fruit spreads to choose from (some are all natural and organic). Our favorites are strawberry, raspberry and apricot. Honey, which you’ll also find in the same area of the supermarket, is another great choice in place of jelly! Remember to always use cold pressed honey as more of the nutrients are preserved by cold pressing instead of using heat. Keep in mind that a person that is allergic to bees cannot eat honey.
3. Cashew Butter or Almond Butter:
Of course a peanut butter and jelly style sandwich doesn’t always have to include peanut butter. Since peanut allergies have unfortunately become a regular occurrence, many grocery stores now carry alternative nut butters like cashew butter and almond butter. Grab a jar on your next shopping trip and try it. You’ll find it has a similar texture, but a slightly different taste than peanut butter. Who knows, your child may love it!
4. Instant Milk:
If your child isn’t a big milk drinker, or you just want to add some additional protein to the sandwich, mix a little instant milk into the peanut butter. Only make small batches (just as much as you need for that particular meal) since milk does spoil. Spread the peanut butter and milk mix on some bread and top with your child’s favorite jelly, fruit spread, or fresh fruit.
5. Peanut Butter And Tomatoes:
Chop tomatoes finely. Press excess fluids out of the chopped tomatoes. Mix with the peanut butter.
6. Use a Tortilla Instead:
Now let’s take a look at the kinds of bread that you can use. Sliced white or wheat bread isn’t your only option when it comes to this popular sandwich. Make it with a tortilla instead. Heat the tortilla just slightly to make it more pliable, then spread it with peanut butter and top with jelly. You can serve it burrito style, or roll it up and cut it into small, bite size chucks.
Kicking up your child’s peanut butter and jelly sandwich is a great way to keep the ”Not peanut butter and jelly, again, Mom.“ blues at bay. Experiment with other options and let your child have a say too. They might come up with some real thrillers for ideas. (My kids wanted to make theirs with Marshmallow Fluff!) But they might just find something they love too.
I think that armed with these ideas, you’ll be serving your kids peanut butter sandwiches in all kinds of disguises. Lunch will never be the same again. Who said there is not more than one recipe for peanut butter and jelly sandwiches?
Here are some fun sweet fillings:
1. Cream Cheese And Dates Recipe:
1 Container cream cheese
10 Finely cut dates
1/2 Cup chopped walnuts.
Mix well and moisten with salad dressing.
2. Cheese And Apricots:
Cream cheese and apricot pulp and moisten with mayonnaise. If liked, chopped nuts may be added.
3. Pineapple Sandwiches:
Finely Chop pineapple which have been sweetened and allowed to stand for several hours. Mix with mayonnaise and spread.
Pecan Muffins with Cherries Recipe
Breakfast, snack or dessert these are good any time of day!
Ingredients:
- 1/2 cup butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 2 eggs (separated)
- 1 cup flour
- 1/4 teaspoon baking powder
- 2 tablespoons maraschino cherry juice
- 1 small jar Maraschino cherries, drained
- 1 package (8 oz) finely ground pecans
- Pecan halves
- Powdered sugar
Instructions:
- Cream the butter and sugar together well.
- Mix in beaten egg yolk, flour, baking powder, cherry juice and egg whites.
- Grease the muffin pan or line with papers.
- Sprinkle finely ground pecans into each well or cup.
- Put in a spoonful of dough, a whole cherry, then another spoonful of dough on top of the cherry so that the cherry will be in the center of each muffin.
- Sprinkle more ground pecan on top and place a sliced pecan half on top of each muffin, more if you want more on top.
- You can place several pecan slices in the shape of a flower on top for a decorative look.
- Bake 10 minutes at 400 degrees F.
- Remove from muffin pan to wire racks for cooling.
- Sprinkle finished muffins lightly with powdered sugar.
Muffins are very handy for school lunches. The starch provide the energy and the pecans a little protein for sustainable energy. Add a fruit and some cheese and your kid's fine for the day. Muffins are very satisfying, and provide a very tasty snack.
