Ingredients for this recipe:
- 11/2 Cups water
- 1/2 Cup lemon juice
- Grated rind of one lemon
- 1 Cup sugar
- 1/2 Cup sherry
- 1/2 Inch stick cinnamon
- 3 or 4 Cloves
- 11/4 Tablespoon gelatine soaked in 4 Tablespoons of water
- 3 Egg whites stiffly beaten
Method for this recipe:
- Put all the ingredients except the sherry, gelatine and egg whites in a saucepan.
- Bring to the boil.
- Add gelatine and stir until dissolved.
- Remove from the heat and strain it through a wire sieve lined with a thin piece of cotton wool. The cotton wool will keep back the impurities and the juice will be beautifully clear, so that it will not be neccessary to clarify it.
- Now add the sherry.
- Leave in a cold place until on the point of congealing.
- Beat with an egg whisk until white and frothy.
- Add the stiffly beaten egg whites and beat until the jelly is nice and smooth.
- Allow to set and serve.
RECIPE FOR TROPICAL FOAMY YOGURT RING
The Yogurt Ring:
- 3/4 cup tropical fruit juice
- 1 sachet powdered gelatin
- 3 egg whites
- 5 oz low fat plain yogurt
- Finely grated rind of 1 lime
Filling:
- 1 mango
- 2 kiwi fruit
- 10-12 physalis cape gooseberries
- Juice of 1 lime
Method for this recipe:
- Place the tropical fruit in a small pan and sprinkle the gelatin over.
- Heat gently until the gelatin is dissolved.
- Whisk the egg whites in a clean, dry bowl until they hold soft peaks.
- Continue whisking hard, while gradually adding the yogurt and lime rind.
- Continue whisking hard and pour in the hot gelatin and the egg white and yogurt mixture in a steady stream, until everything is smooth and evenly mixed.
- Quickly pour the mixture into a 6 ¼ cup ring mould.
- Chill the mould in the fridge until set.
- The mixture will separate into two layers.
- Halve stone, peel and dice the mango.
- Peel and slice the kiwi fruit.
- Remove the outer leaves from the physalis and cut in half.
- Toss all the fruits together and stir in the lime juice.
- Run a knife around the edge of the ring to loosen the mixture.
- Dip the tin quickly into cold water and then turn the chilled yogurt mould onto a serving plate.
- Spoon all the prepared fruit into the centre of the ring and serve immediately.

RECIPE FOR RASPBERRY VACHERIN
Meringue rounds filled with orange-flavored low fat fromage frais and fresh raspberries make this a perfect dinner party dessert. And what is best it is a low fat recipe!
Meringue:
- 3 egg whites
- ¾ cup castor sugar
- 1 tsp chopped almonds
- Icing sugar for dusting
- Raspberry leaves, to decorate (optional)
For the filling:
- ¾ cup low fat soft cheese
- 1-2 tbsp clear honey
- 1-2 tbsp Contreau
- ½ cup low fat fromage frais
- 8 oz raspberries
Method for this recipe:
- Preheat the oven to Gas 1.
- Draw an 8 in circle on two pieces of non-stick baking paper.
- Turn the paper over so the marking is on the underside and use it to line two heavy baking sheets.
- Whisk the egg whites in a clean bowl until very stiff, then gradually whisk in the castor sugar to make a stiff meringue mixture.
- Spoon the mixture on to the circles on the prepared baking sheets, spreading the meringue evenly to the edges.
- Sprinkle one meringue round with the chopped almonds.
- Bake for 1 ½ -2 hours until crisp and dry, and then carefully lift the meringue rounds off the baking sheets.
- Peel away the paper and cool the meringue on a wire rack.
- To make the filling, cream the soft cheese with the honey and liqueur in a bowl.
- Gradually fold in the fromage frais and the raspberries, reserving three berries for decoration.
- Place the plain meringue round on a board, spread with the filling and top with the nut-covered round.
- Dust with the icing sugar, transfer to a serving plate and decorate with the reserved raspberries and a sprig of raspberry leaves, if you like.
